Does anyone have a word document or chart with the basic knife cuts?

man I've been searching for this 3-D tool for you. its a 4x5 plastic card with all the standard knife cuts in 3-d relief so you can compare them right to your own cuts. it even has a ruler on the side.
All it needs is a little salt.... pepper.... mustard, catchup, sauce, flavour. -- Trapper

they have that plastic card for sale at the cook's store at the Texas Culinary Academy. maybe there is a cooking school close to you where you could checkout the bookstore and see if they carry one too.

As part of my books for school, I got
"The Professional Chef's Knife Kit"
from Culinary Institute of America

It has step by step instructions for all of the major cuts.
As well as how to care for your knives, meat fabrication...
Lots of great stuff.
I use parts of it to teach my knife skills classes now.
I like the idea of 3-d models
